Ingredients

4 medium russet potatoes, washed and cut into wedges

1 large onion, sliced into thick rings

4 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon freshly ground black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup and to prevent sticking.

Prepare the Veggies: In a large mixing bowl, combine the potato wedges and onion rings.

Season the Mixture: Drizzle the olive oil over the potatoes and onions. Sprinkle the garlic powder, smoked paprika, thyme, salt, and black pepper. Toss everything together until the potatoes and onions are evenly coated with the olive oil and spices.

Spread on Baking Sheet: Spread the seasoned potatoes and onions out in a single layer on the prepared baking sheet. Make sure there’s space between them for optimal crispiness!

Bake: Place the baking sheet in the preheated oven. Bake for about 30-35 minutes, flipping the potatoes and onions halfway through to ensure even browning. They should be golden brown and crispy when done.

Garnish and Serve: Once done, remove the baking sheet from the oven. Sprinkle the baked potatoes and onions with freshly chopped parsley for a pop of color and freshness. Serve immediately as a delightful side dish!
