4 pieces of chicken (legs or thighs recommended)

1 cup buttermilk

1 tablespoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon baking powder

Olive oil spray or melted butter for drizzling

Marinate the Chicken: In a large bowl, whisk together the buttermilk and hot sauce (if using). Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.

    Prepare the Coating: Preheat your oven to 425°F (220°C). In another bowl, combine the flour, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, pepper, and baking powder. Mix well to ensure the herbs and spices are evenly distributed.

      Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing the excess to drip off. Dredge each piece in the seasoned flour mixture, pressing firmly to ensure a good coating. Shake off any excess flour.
