Oven Baked Chicken Fajitas Recipe

1.5 lbs boneless, skinless chicken breasts, sliced into thin strips

1 large bell pepper (any color), sliced

1 large red onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Juice of 1 lime

8 small tortillas (flour or corn)

Optional toppings: chopped cilantro, avocado slices, shredded cheese, sour cream, salsa

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken and Vegetables: In a large bowl, combine the sliced chicken, bell pepper, and red onion.

      Season the Mixture: Drizzle the olive oil over the chicken and vegetables. Sprinkle with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss everything together until well coated.

        Bake: Spread the seasoned chicken and vegetables evenly on a large baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

          Finish with Lime: Once done, remove the pan from the oven and squeeze fresh lime juice over the top.

            Warm the Tortillas: While the chicken and vegetables are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they are soft and pliable.

              Serve: Serve the baked chicken and veggies with the warm tortillas. Top with your choice of optional toppings such as chopped cilantro, avocado slices, shredded cheese, sour cream, and salsa.
