1 large sweet onion (like a Vidalia or Walla Walla)

1 cup all-purpose flour

2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp cayenne pepper (adjust for heat preference)

1 tsp salt

1/2 tsp black pepper

1 cup buttermilk

2 large eggs

Oil for frying (preferably vegetable oil)

For the Dipping Sauce:

1/2 cup mayonnaise

1/4 cup sour cream

2 tsp ketchup

1 tsp horseradish sauce (adjust to taste)

1/2 tsp paprika

1/2 tsp Worcestershire sauce

Salt and pepper to taste

Instructions
 

Prep the Onion:

    - Carefully slice about 1 inch off the top of the onion. Remove the outer skin but keep the root intact.

      - Place the onion cut-side down and make vertical cuts from the top to the bottom, making sure not to cut through the root. Space the cuts about 1/4 inch apart all around the onion, creating 'petals.'

        - Gently separate the petals using your fingers to form a bloom pattern.

          Prepare the Batter:

            - In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

              - In another bowl, combine buttermilk and eggs, mixing until well combined.

                Dredge the Onion:

                  - Dip the prepared onion into the buttermilk mixture, ensuring it's well coated.

                    - Then remove the onion and place it into the flour mixture. Gently toss the onion to ensure all the petals are coated evenly. Shake off any excess flour.

                      - Dip the onion back into the buttermilk mixture, and then again into the flour mixture for a thicker crust. Press the flour mixture onto the onion gently to help it stick.

                        Heat the Oil:

                          - In a large, deep pot or fryer, heat about 3 inches of oil to 350°F (175°C). Use a deep-fry thermometer for accuracy.

                            Fry the Onion:

                              - Carefully lower the coated onion into the hot oil, root side down. Fry for about 10-12 minutes or until the onion is golden brown and crispy.

                                - Use a slotted spoon to carefully remove the onion from the oil and place it on paper towels to drain excess oil.

                                  Prepare the Dipping Sauce:

                                    - In a small bowl, combine mayonnaise, sour cream, ketchup, horseradish sauce, paprika, Worcestershire sauce, salt, and pepper. Mix well until smooth and creamy.

                                      Serve:

                                        - Place the bloomin' onion on a serving plate, and serve immediately with the dipping sauce in the center.
