One-Skillet Sausage and Spinach Gnocchi

1 lb (450g) gnocchi (store-bought or homemade)

2 tablespoons olive oil

1 lb (450g) Italian sausage (mild or spicy, casings removed)

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup heavy cream

½ cup grated Parmesan cheese, plus more for serving

Fresh basil leaves for garnish

Instructions
 

Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through (about 5-7 minutes).

    Add Aromatics: Stir in the minced garlic and cook for an additional minute, until fragrant.

      Incorporate Cherry Tomatoes: Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.

        Cook the Gnocchi: Meanwhile, in a separate pot, boil a large pot of salted water. Once boiling, add the gnocchi and cook according to package instructions (usually just 2-3 minutes). They are ready when they float to the top. Drain and set aside.

          Combine Ingredients: Once the tomatoes are soft, add the chopped spinach and cooked gnocchi to the skillet. Stir gently to combine.

            Create the Sauce: Pour in the heavy cream and sprinkle in the Italian seasoning, salt, and pepper. Stir everything together and let it simmer for about 2-3 minutes until heated through.

              Melt the Cheese: Reduce heat to low and stir in the Parmesan cheese, allowing it to melt and thicken the sauce. Taste and adjust seasoning if necessary.
