One-Pot Taco Pasta

1 pound ground beef (or turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 tablespoon olive oil

2 teaspoons taco seasoning (store-bought or homemade)

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) tomato sauce

3 cups chicken or vegetable broth

12 oz elbow macaroni or rotini pasta

1 cup corn (frozen or canned)

Salt and pepper, to taste

1 cup shredded cheddar cheese (plus extra for topping)

Optional toppings: sour cream, green onions, cilantro, jalapeños

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 4-5 minutes or until the onion becomes translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up into smaller pieces with a spoon, about 6-8 minutes. Drain excess fat if needed.

      Season and Combine: Stir in the taco seasoning, diced tomatoes (with juices), black beans, tomato sauce, and chicken broth. Mix well.

        Add the Pasta: Bring the mixture to a simmer. Once simmering, add the pasta and corn. Stir well to combine, making sure the pasta is submerged in the liquid.

          Cook the Pasta: Cover the pot and let it simmer for about 12-15 minutes, stirring occasionally until the pasta is al dente and cooked through. If the mixture looks too thick, add a little extra broth or water.

            Stir in Cheese: Remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

              Serve and Garnish: Spoon the taco pasta into bowls. Top with extra cheese and any optional toppings like sour cream, sliced green onions, chopped cilantro, and jalapeños as desired.
