12 oz smoked sausage, sliced

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional for heat)

4 cups low-sodium chicken broth

12 oz penne pasta

1 can (14 oz) diced tomatoes, undrained

1 cup frozen peas

Salt and pepper to taste

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil or parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.

    Add the diced onion and bell pepper to the pot. Sauté until the onion becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Sprinkle in the Italian seasoning, smoked paprika, and red pepper flakes (if using). Stir to combine and let the spices toast slightly for about 1 minute.

        Pour in the chicken broth and bring to a simmer. Add the penne pasta and diced tomatoes (with juices). Stir well and bring it back to a simmer.

          Reduce heat to medium-low, cover, and cook for about 12-15 minutes or until the pasta is al dente, stirring occasionally to prevent sticking.

            Once the pasta is cooked, stir in the frozen peas and the browned smoked sausage. Let it cook for another 2-3 minutes until the peas are heated through.

              Remove from heat, and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

                Serve hot, garnished with fresh basil or parsley and an extra sprinkle of Parmesan cheese.
