One-Pot Lemon Herb Pasta

12 oz spaghetti (or your choice of pasta)

4 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 medium lemon (juice and zest)

1/2 cup freshly grated Parmesan cheese (or nutritional yeast for vegan)

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and cook for an additional 1 minute, ensuring it doesn't burn.

      Add the vegetable broth, spaghetti, cherry tomatoes, dried oregano, and red pepper flakes (if using). Increase the heat to bring the mixture to a boil, then reduce to a simmer.

        Cover the pot and let the pasta cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the broth.

          Once the pasta is cooked, stir in the lemon juice, lemon zest, spinach, parsley, and basil. Mix well and let it cook for another 2-3 minutes to wilt the spinach.

            Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning with salt and pepper.

              Serve immediately, garnished with extra herbs and a sprinkle of Parmesan cheese if desired.
