8 oz penne pasta

12 oz kielbasa sausage, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, with juices

4 cups vegetable broth

1 cup heavy cream

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup frozen peas

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Kielbasa: In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: Add the diced tomatoes (with their juices), vegetable broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir to combine.

        Add the Pasta: Bring the mixture to a gentle boil. Add the penne pasta, stirring well to ensure the pasta is submerged in liquid. Reduce heat to a simmer and cover the pot. Cook for about 12-14 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Finish with Cream and Peas: Stir in the heavy cream, frozen peas, and the browned kielbasa. Cook for an additional 2-3 minutes, just until everything is heated through and well combined.

            Garnish and Serve: Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning with salt and pepper as needed. Garnish with fresh parsley before serving.
