1 lb (450g) Italian sausage (mild or spicy, based on preference)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup (150g) cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

4 cups (1 liter) chicken or vegetable broth

1 cup (200g) orzo pasta

2 cups (60g) fresh spinach, roughly chopped

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Remove the casing from the Italian sausage and crumble it into the pot. Cook for about 5-7 minutes until browned and cooked through, using a wooden spoon to break it up into smaller pieces.

    Sauté the Aromatics: Add the diced onion and minced garlic to the pot. Cook for an additional 2-3 minutes until the onion becomes translucent. Then, add the diced red bell pepper and cook for another 2 minutes.

      Add the Tomatoes and Spices: Stir in the halved cherry tomatoes, oregano, basil, salt, and pepper. Cook for an additional minute, allowing the tomatoes to release some of their juices.

        Pour in the Broth and Orzo: Pour in the chicken or vegetable broth and bring the mixture to a gentle boil. Once boiling, stir in the orzo pasta, ensuring it is evenly distributed.

          Simmer: Reduce the heat to low, cover the pot, and let it simmer for about 10-12 minutes, or until the orzo is cooked al dente and has absorbed most of the liquid. Stir occasionally to prevent sticking.

            Add Spinach: Once the orzo is cooked, remove the pot from heat and stir in the fresh spinach until wilted. Adjust seasoning with additional salt and pepper if needed.

              Serve: Ladle the one-pot pasta into bowls, top with grated Parmesan cheese, and garnish with fresh basil leaves.
