One-Pot Creamy Cajun Pasta

12 oz (340g) penne pasta

1 lb (450g) chicken breast, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 can (14.5 oz) diced tomatoes, undrained

2 cups chicken broth

1 cup heavy cream

2 teaspoons Cajun seasoning (plus more for garnish)

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup grated Parmesan cheese

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the diced chicken breast and season with salt, pepper, and 1 teaspoon Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, minced garlic, and sliced bell pepper. Sauté for 3-4 minutes or until the vegetables are softened and fragrant.

      Add Pasta and Liquid: Stir in the penne pasta, canned diced tomatoes (with juice), chicken broth, remaining Cajun seasoning, smoked paprika, and more salt and pepper if needed. Bring to a boil, then reduce to a simmer.

        Cook the Pasta: Cover the pot and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.

          Make it Creamy: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix well until everything is combined and creamy. If the pasta looks dry, add a little more chicken broth or water until you reach your desired consistency.

            Combine Chicken: Add the cooked chicken back into the pot, stirring to combine. Let it heat through for another 2-3 minutes.

              Garnish and Serve: Remove the pot from heat and sprinkle with additional Cajun seasoning, chopped green onions, and fresh parsley before serving.
