One-Pot Beef and Pumpkin Chili

1 lb (450g) ground beef

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes

2 cups beef broth

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cinnamon

Salt and pepper to taste

2 tbsp olive oil

1 cup corn (fresh, frozen, or canned)

Fresh cilantro, for garnish

Sour cream and shredded cheese, for serving (optional)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and red bell pepper. Sauté for about 5 minutes, or until the onion is translucent. Add the minced garlic and sauté for an additional 1 minute, until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, about 5-7 minutes, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.

      Spice it Up: Sprinkle in the chili powder, cumin, smoked paprika, cinnamon, salt, and pepper. Stir well to coat the beef and vegetables with the spices.

        Add the Remaining Ingredients: Pour in the pumpkin puree, black beans, diced tomatoes (with their juice), beef broth, and corn. Stir well to combine all the ingredients.

          Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for 30-40 minutes, stirring occasionally to prevent sticking. The flavors will meld together beautifully during this time.

            Adjust Seasoning: After simmering, taste the chili and adjust the seasoning if necessary. If you prefer a spicier chili, add more chili powder or a dash of hot sauce.
