Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup heavy cream

¼ cup chicken broth

1 teaspoon dried Italian herbs (oregano, basil, thyme mix)

½ teaspoon red pepper flakes (optional for spice)

Salt and pepper to taste

¼ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and dried Italian herbs.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side, until they are golden brown and cooked through (internal temperature of 165°F). Remove the chicken and set aside.

Sauté Garlic and Veggies: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook until they begin to soften, about 3-4 minutes. Stir in the baby spinach and cook until wilted.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add in the red pepper flakes if using, and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.

Combine: Return the seared chicken to the skillet. Spoon the sauce over the chicken and let it simmer for an additional 3-4 minutes, allowing the flavors to meld.

Finish off with Cheese: Sprinkle the grated Parmesan cheese over the chicken and let it melt into the sauce (about 2 minutes).

Serve: Garnish with fresh basil leaves before serving. Enjoy your One-Pan Tuscan Chicken with crusty bread or over pasta for an extra indulgent meal.
