4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup pure maple syrup

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups broccoli florets

1 cup baby carrots

1 red bell pepper, sliced

1 yellow onion, sliced

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven: Preheat your oven to 400°F (200°C).

    Prepare the marinade: In a medium bowl, whisk together Dijon mustard, maple syrup, olive oil, minced garlic, dried thyme, smoked paprika, salt, and pepper until well combined.

      Marinate the chicken: Place the chicken breasts in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring it's evenly coated. Let it marinate for at least 30 minutes (for best flavor, marinate for up to 2 hours in the refrigerator).

        Prepare the veg: While the chicken marinates, prepare your vegetables. In a large bowl, combine the broccoli florets, baby carrots, red bell pepper, and yellow onion. Drizzle with olive oil, salt, and pepper, then toss until evenly coated.
