1 lb large shrimp, peeled and deveined

1 cup jasmine rice, rinsed

2 tablespoons unsalted butter

4 garlic cloves, minced

1 medium onion, finely chopped

1 cup chicken broth

1 cup water

Zest and juice of 1 large lemon

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups spinach (fresh)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté Aromatics: In a large skillet over medium heat, melt the butter. Once melted, add the chopped onion and sauté for about 3-4 minutes until they become translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook the Rice: Add the rinsed jasmine rice to the skillet, stirring often for about 2 minutes to toast the rice slightly. This adds flavor.

      Add Liquids and Spices: Pour in the chicken broth and water, then add the lemon zest, lemon juice, smoked paprika, oregano, salt, and pepper. Stir everything together and bring to a gentle boil.

        Make it a Meal: Once it’s boiling, lower the heat to a simmer and cover the skillet with a lid. Let it cook for about 15 minutes.

          Add Shrimp and Veggies: After 15 minutes, uncover the skillet and gently stir in the shrimp and halved cherry tomatoes. Add the fresh spinach on top without stirring, recover the skillet, and cook for an additional 5-7 minutes, or until the shrimp are pink and the rice is tender.

            Final Touch: Once cooked, give everything a gentle stir to combine. Taste and adjust seasoning with more salt and pepper if necessary.

              Serve: Remove from heat and let it rest for about 2 minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
