4 bone-in pork chops (about 1-inch thick)

1 pound baby gold potatoes, halved

1 tablespoon olive oil

2 teaspoons ranch seasoning mix (store-bought or homemade)

1 cup heavy cream

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon of the ranch seasoning mix.

      Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with olive oil, remaining ranch seasoning, garlic powder, onion powder, salt, and pepper until evenly coated.

        Sear the Pork Chops: In a large oven-safe skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the pork chops and sear for about 3-4 minutes on each side, until golden brown. Remove pork chops from the skillet and set aside.

          Combine Ingredients: In the same skillet, add the potatoes and pour in the chicken broth and heavy cream. Stir well to combine and bring to a gentle simmer.

            Return Pork Chops to the Skillet: Nestle the seared pork chops back into the skillet with the creamy potato mixture.

              Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops are cooked through (internal temperature of 145°F or 63°C) and the potatoes are fork-tender.
