4 boneless, skinless chicken thighs

1 cup long-grain white rice, rinsed

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 cup frozen peas (optional)

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet or sauté pan, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add them to the skillet and sear for about 5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

    Sauté the Aromatics: In the same pan, reduce the heat to medium and add the diced onion. Sauté for about 3-4 minutes until soft. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Rice and Seasonings: Pour in the rinsed rice, then add the Italian seasoning, stirring everything together for about a minute to toast the rice slightly.

        Add Liquids: Pour in the chicken broth and heavy cream, mixing well. Bring the mixture to a simmer.

          Combine Chicken and Rice: Return the seared chicken thighs to the pan, nestling them into the rice mixture. Make sure the chicken is mostly submerged.

            Cook Until Done: Cover the pan, reduce the heat to low, and let everything simmer for about 25 minutes until the rice is cooked and has absorbed most of the liquid.
