Ingredients
  

1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup uncooked brown rice

2 cups chicken broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 bell pepper, diced (any color)

1 small red onion, diced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Sour cream or Greek yogurt (for serving, optional)

Shredded cheese (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine diced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Mix well until the chicken is evenly coated. Set aside to marinate while preparing other ingredients.

    Sauté the Vegetables: In a large skillet or sauté pan, heat a little more olive oil over medium heat. Add the diced red onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

      Cook the Chicken: Push the sautéed vegetables to the side of the pan and add the marinated chicken to the center. Cook the chicken for about 5-7 minutes, stirring occasionally, until it's cooked through and no longer pink.

        Add Rice and Broth: Pour in the uncooked brown rice and chicken broth. Stir everything together, ensuring that the rice is submerged in the liquid. Bring it to a gentle boil.

          Add Beans, Corn, and Tomatoes: Once boiling, add the black beans, corn, and diced tomatoes. Stir well to combine all ingredients.

            Simmer: Reduce the heat to low, cover the pan, and let it simmer for 25-30 minutes, or until the rice is fully cooked and has absorbed the liquid. Stir occasionally to prevent sticking, adding a splash more broth or water if needed.

              Finish the Bowl: Once the rice is tender, remove from heat and stir in the lime juice and chopped cilantro for brightness.

                Serve: Spoon the chicken burrito mixture into bowls. Top with slices of avocado, a dollop of sour cream or Greek yogurt, shredded cheese if desired, and additional cilantro.
