1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

2 tbsp Cajun seasoning

1 tsp paprika

1/2 tsp salt (to taste)

1/4 tsp black pepper

2 tbsp olive oil

1 cup frozen peas

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large skillet or pan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir occasionally.

    Add Garlic: Throw in the minced garlic and sauté for an additional minute until aromatic, being careful not to burn it.

      Incorporate Spices: Sprinkle in the Cajun seasoning, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.

        Combine Rice and Broth: Add the rice to the pan, stirring to combine it with the vegetables and spices. Then pour in the chicken broth and undrained diced tomatoes. Mix well.

          Cook Rice: Bring the mixture to a boil. Once boiling, lower the heat, cover the pan, and let simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

            Add Shrimp and Peas: Gently fold in the shrimp and frozen peas, ensuring they are evenly distributed. Cover again and cook for an additional 5-7 minutes, or until the shrimp is pink and cooked through, stirring occasionally.

              Finish and Garnish: Remove from heat and let it sit, covered, for about 5 minutes. Garnish with sliced green onions and chopped parsley before serving.
