Ingredients
  

1 cup granulated sugar

1/4 cup unsweetened cocoa powder

1/4 cup whole milk

1/4 cup unsalted butter

1 teaspoon vanilla extract

A pinch of salt

Optional: 1/2 cup chopped nuts (pecans or walnuts)

Instructions
 

In a medium saucepan, combine the granulated sugar, cocoa powder, and a pinch of salt. Stir the dry ingredients together until well mixed.

    Add the milk and butter to the saucepan. Cook over medium heat, constantly stirring until the mixture comes to a boil.

      Once boiling, stop stirring and allow the mixture to boil without stirring for 4-5 minutes. Use a candy thermometer to ensure it reaches a temperature of 234°F (soft ball stage).

        Remove the saucepan from heat and let it cool for 5 minutes without stirring.

          After it has cooled briefly, add the vanilla extract and mix well. If you're using nuts, fold them in at this stage.

            Beat the icing vigorously with a wooden spoon until it thickens and loses its glossy sheen. This should take about 5-7 minutes.

              Pour the warm fudge icing over your favorite cake or brownies, spreading it evenly with a spatula. Allow it to set before serving.
