4 ripe bananas, sliced

1 box (12 oz) vanilla wafers

1 cup granulated sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

2 3/4 cups whole milk

3 large egg yolks, beaten

1 teaspoon vanilla extract

2 tablespoons unsalted butter

Prepare the Pudding Base: In a medium saucepan, whisk together the sugar, flour, and salt. Gradually add the milk while stirring to avoid lumps. Cook over medium heat, stirring frequently until the mixture thickens and starts to bubble (about 10-15 minutes).

    Tempering the Egg Yolks: In a separate bowl, beat the egg yolks. Once the pudding mixture is bubbling, slowly pour about a cup of the hot mixture into the egg yolks, whisking continuously to temper them. This prevents the eggs from curdling.

      Combine the Mixtures: Pour the tempered egg yolk mixture back into the saucepan with the remaining pudding base. Continue to cook over medium heat for another 2-3 minutes, stirring constantly until thickened. Remove from heat and stir in the vanilla extract and butter until melted and smooth.

        Layer the Ingredients: In a 3-quart glass dish, spread a layer of vanilla wafers, then add a layer of sliced bananas, followed by a layer of the warm pudding. Repeat the layers until all ingredients are used, finishing with the pudding on top.

          Chill: Cover the dish with plastic wrap (gently to avoid sticking) and refrigerate for at least 4 hours, or overnight for best results.
