Ingredients
  

2 cups rolled oats

1 cup crispy rice cereal

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla)

1 cup fresh strawberries, hulled and sliced

1 tablespoon lemon juice

1/4 cup chopped nuts (almonds, walnuts, or pecans) for topping (optional)

Instructions
 

Prepare the Base:

    In a large mixing bowl, combine the rolled oats and crispy rice cereal. Mix well and set aside.

      Make the Sticky Mixture:

        In a small saucepan over low heat, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir constantly until melted and well combined. Remove from heat and let cool slightly.

          Combine Ingredients:

            Pour the warm sticky mixture over the oat and cereal mixture. Stir thoroughly until the dry ingredients are completely coated. This will form the base of your bars.

              Press the Mixture:

                Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Pour the mixture into the dish and press firmly into an even layer. Use a spatula or your hands to ensure it’s tightly packed.

                  Prepare the Yogurt Layer:

                    In a medium bowl, combine the Greek yogurt, sliced strawberries, and lemon juice. Stir gently until the strawberries are evenly distributed throughout the yogurt.

                      Layer the Yogurt:

                        Spread the yogurt and strawberry mixture evenly over the oat base in the baking dish. Tap the dish lightly on the counter to settle the yogurt layer.

                          Chill the Bars:

                            If desired, sprinkle the chopped nuts on top of the yogurt layer for added crunch. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

                              Cut and Serve:

                                Once the bars are firm, lift them out of the dish using the parchment paper overhang. Cut into squares or bars. Enjoy immediately or store in an airtight container in the fridge for up to a week.
