2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar, divided

1/2 cup unsalted butter, melted

2 cups graham cracker crumbs

1 cup coconut flakes (sweetened or unsweetened)

1 cup heavy whipping cream

8 oz cream cheese, softened

1 tsp vanilla extract

1/2 cup powdered sugar

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with 1/4 cup of granulated sugar. Toss gently and let them macerate for at least 30 minutes to release their juices.

    Make the Crunch Topping: In a medium bowl, mix together the melted butter, graham cracker crumbs, remaining 3/4 cup of granulated sugar, and coconut flakes until well combined. Use your hands to crumble any large lumps and set aside.

      Prepare the Cream Cheese Layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the heavy whipping cream, vanilla extract, and powdered sugar, and continue mixing until it forms soft peaks.

        Layer the Cake: In a 9x13 inch dish, spread half of the cream cheese mixture evenly across the bottom. Then, layer half of the macerated strawberries over the cream. Sprinkle half of the crunch topping over the strawberries.
