Ingredients

2 cups fresh pineapple chunks

1 cup coconut milk (canned or carton)

1/2 cup Greek yogurt (for creaminess)

2 tablespoons honey or agave syrup (adjust to taste)

1 teaspoon lime juice

A pinch of salt

Optional: shredded coconut or diced fruits for added texture

Instructions

Prepare the Pineapple: Fresh pineapple should be peeled, cored, and cut into chunks. If you’re using canned pineapple, make sure it's packed in juice and drained well.

Blend the Mixture: In a blender, combine the fresh pineapple chunks, coconut milk, Greek yogurt, honey or agave syrup, lime juice, and a pinch of salt. Blend on high until the mixture is smooth and creamy. Taste and adjust the sweetness if necessary.

Add Texture (Optional): If desired, stir in some shredded coconut or diced fruits for added texture.

Fill the Molds: Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion.

Insert Sticks: Gently insert popsicle sticks into the molds (make sure they are centered).

Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until solid.

Unmold the Popsicles: To remove the popsicles from their molds, run warm water over the outside of the molds for a few seconds, or gently twist the molds. Pull on the sticks to release the popsicles.

Serve and Enjoy: Enjoy these refreshing popsicles immediately or store them in a sealed container in the freezer for up to two weeks.
