Ingredients

For the crust:

24 Oreo cookies, crushed into fine crumbs

5 tablespoons unsalted butter, melted

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup powdered sugar

1 cup heavy cream

1 teaspoon vanilla extract

1 tablespoon instant coffee granules (or espresso powder)

1 tablespoon hot water

1/4 cup cocoa powder

1/2 cup mini chocolate chips (optional)

For the topping:

1 cup whipped cream (store-bought or homemade)

4 crushed Oreo cookies (for garnish)

Dark chocolate shavings (for garnish)

Instructions

Prepare the crust:

    - In a mixing bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are evenly coated with the butter.

      - Press the mixture firmly into the bottom of a parchment-lined 9x9 inch square baking pan. Ensure it's compact for a sturdy base. Chill in the freezer while preparing the filling.

        Make the cheesecake filling:

          - In a small bowl, dissolve the instant coffee granules in the hot water. Let it cool slightly.

            - In a large mixing bowl, beat the softened cream cheese and powdered sugar together using an electric mixer until smooth and creamy.

              - Add the cooled coffee mixture, vanilla extract, and cocoa powder. Beat again until well combined and no lumps remain.

                - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. If desired, fold in the mini chocolate chips for an extra chocolatey delight.

                  Assemble the cheesecake bars:

                    - Pour the cheesecake filling over the chilled Oreo crust, spreading it out evenly with a spatula. Smooth the top.

                      - Cover the pan with plastic wrap and refrigerate for at least 4 hours or until set, preferably overnight.

                        Serve:

                          - Once set, lift the cheesecake from the pan using the parchment paper.

                            - Cut into bars (approximately 12 pieces) and top each bar with a dollop of whipped cream.

                              - Sprinkle crushed Oreo cookies and dark chocolate shavings on top for an extra touch.

                                Enjoy:

                                  - Serve chilled and savor the creamy, chocolaty, and coffee-infused goodness of your no-bake Oreo mocha cheesecake bars!
