For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

16 oz cream cheese, softened

2/3 cup powdered sugar

1 tsp vanilla extract

Zest of 1 orange

1 cup heavy whipping cream

For the Pineapple Swirl:

1 cup crushed pineapple, drained (reserve juice)

1 tbsp granulated sugar

1 tbsp cornstarch

1 tbsp reserved pineapple juice

Garnish:

Fresh orange slices

Pineapple chunks

Whipped cream (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Chill in the refrigerator while preparing the filling.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

            - Gradually add in the powdered sugar and vanilla extract, mixing well until fully incorporated.

              - Fold in the orange zest gently until evenly distributed.

                - In a separate bowl, whip the heavy cream until stiff peaks form.

                  - Carefully fold the whipped cream into the cream cheese mixture until well combined and fluffy.

                    Prepare the Pineapple Swirl:

                      - In a small saucepan over medium heat, combine the crushed pineapple, sugar, cornstarch, and reserved pineapple juice. Stir continuously until the mixture thickens and is bubbly, about 3-5 minutes. Remove from heat and let cool slightly.

                        Assemble the Cheesecake:

                          - Pour half of the cheesecake filling into the chilled crust and spread evenly.
