Ingredients

2 cups fresh figs, stems removed and quartered

1 cup granulated sugar

2 tablespoons lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

A pinch of sea salt

1/2 cup water

Instructions

Prepare the Figs: Start by washing the fresh figs thoroughly. Remove the stems and cut the figs into quarters. This will help them break down more easily during the cooking process.

Combine Ingredients: In a medium saucepan, combine the quartered figs, granulated sugar, lemon juice, vanilla extract, cinnamon (if using), sea salt, and water.

Cook the Mixture: Place the saucepan over medium heat. Stir the mixture gently until the sugar dissolves completely. Bring to a gentle simmer, then decrease the heat to low. Allow it to simmer for about 10-15 minutes, stirring occasionally, until the figs soften and the mixture thickens slightly.

Mash and Blend: After simmering, remove the saucepan from the heat. Using a potato masher or fork, mash the figs to your desired consistency. For a smoother texture, you can use an immersion blender to blend the mixture until smooth.

Cool Down: Allow the fig jam to cool at room temperature for about 20-30 minutes. You’ll notice it will thicken further as it cools.

Store the Jam: Transfer the jam to sterilized glass jars while still warm. Seal tightly and let it cool completely at room temperature before placing it in the refrigerator. The jam can be stored in the fridge for up to 2-3 weeks.
