1 cup rolled oats

1/2 cup nut butter (almond or peanut)

1/4 cup honey or maple syrup

1/2 cup shredded unsweetened coconut

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

A pinch of sea salt

Instructions
 

In a large mixing bowl, combine the rolled oats, nut butter, honey (or maple syrup), shredded coconut, ground flaxseed, vanilla extract, and sea salt. If you're adding chocolate chips, toss them in now.

    Mix all the ingredients together until they are well combined and sticky. You may need to use your hands to ensure everything is incorporated evenly.

      Once mixed, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this step until all the mixture is used up. You should have around 12-16 energy bites.

        Place the energy bites on a baking sheet lined with parchment paper and refrigerate them for at least 30 minutes to firm up.

          Once set, transfer the bites to an airtight container and store them in the refrigerator for up to a week. Enjoy these bites as a healthy snack or a pre-workout boost!
