1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

¼ cup all-purpose flour

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring it's even. Bake for 10 minutes, then remove and let cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup sugar and mix until combined.

        Add Vanilla and Eggs: Add vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed until just combined. Avoid overmixing to prevent excess air bubbles.

          Incorporate the Sour Cream and Flour: Gently fold in the sour cream, flour, and lemon zest until the mixture is smooth.

            Pour and Bake: Pour the cheesecake filling over the cooled crust in the springform pan. Spread it evenly. Bake for about 1 hour or until the center is set but still slightly jiggly.

              Cooling Process: Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for about 1 hour to prevent cracking. Afterward, transfer it to the refrigerator and chill for at least 4 hours, preferably overnight.
