1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1 cup chopped pecans

1 cup shredded coconut

1 cup semi-sweet chocolate chips

1 cup powdered sugar (for icing)

1/4 cup milk (for icing)

1 teaspoon vanilla extract (for icing)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.

    In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 4-5 minutes.

      Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture, alternating with buttermilk. Mix until just combined.

          Fold in the chopped pecans, shredded coconut, and chocolate chips until evenly distributed throughout the batter.

            Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.

              Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

                While the cakes are cooling, prepare the icing. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and spreadable.

                  Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of icing on top, then place the second layer on top. Use the remaining icing to cover the top and sides of the cake.

                    Optionally, garnish with additional chopped pecans or coconut flakes on top for decoration.
