1 lb beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

3 stalks celery, sliced

2 medium potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn (fresh, frozen, or canned)

1 can (14.5 oz) diced tomatoes, undrained

6 cups beef broth

2 teaspoons dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5 minutes. Remove the beef and set it aside.

    Sauté the Vegetables: In the same pot, add the chopped onion and garlic. Sauté for about 3 minutes until the onion is translucent. Add the carrots and celery, cooking for another 5 minutes.

      Combine Ingredients: Return the browned beef to the pot. Add the diced potatoes, green beans, corn, and diced tomatoes. Stir well to combine all the ingredients.

        Add Liquid and Seasoning: Pour in the beef broth and add the thyme, oregano, bay leaf, salt, and pepper. Stir until well combined.

          Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors meld together.

            Final Touches: Before serving, remove the bay leaf and taste the soup. Adjust the seasoning with more salt and pepper if needed.
