For the Cookie Crust:

1 ½ cups chocolate sandwich cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Mint Cheesecake Layer:

16 oz (2 packages) cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon peppermint extract

2 tablespoons all-purpose flour

1 cup whipped cream (homemade or store-bought)

¼ cup mini chocolate chips (optional)

For the Chocolate Cake Layer:

1 ¾ cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

2 teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Mint Chocolate Ganache:

1 cup heavy whipping cream

8 oz semi-sweet chocolate, chopped

1 teaspoon peppermint extract

Fresh mint leaves and chocolate shavings for garnish

Preheat the Oven: Preheat your oven to 325°F (163°C). Prepare a 9-inch springform pan by greasing it lightly.

    Make the Cookie Crust:

      - In a mixing bowl, combine crushed chocolate sandwich cookies, melted butter, and granulated sugar.

        - Press this mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then remove and set aside to cool.

          Prepare the Mint Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.

              - Add the eggs one at a time, mixing well after each addition.

                - Stir in vanilla and peppermint extracts along with the flour until just combined.

                  - Gently fold in the whipped cream and mini chocolate chips, if using.

                    - Pour the cheesecake batter over the cooled cookie crust. Bake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Remove and cool completely, then refrigerate for at least 4 hours or overnight.

                      Bake the Chocolate Cake Layer:

                        - In a bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

                          - Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin).

                            - Pour the batter into a greased 9-inch round cake pan. Bake for 30-35 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                              Prepare the Mint Chocolate Ganache:

                                - In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.

                                  - Remove from heat and add chopped chocolate, stirring until completely smooth. Stir in peppermint extract.

                                    - Allow the ganache to cool for about 30 minutes until it thickens slightly.

                                      Assemble the Cake:

                                        - Place the cooled chocolate cake layer on a serving platter. Carefully remove the cheesecake from the springform pan and place it on top of the chocolate cake layer.

                                          - Drizzle the mint chocolate ganache over the top, allowing it to drip down the sides.

                                            - Refrigerate the assembled cake for at least 1 hour to set the ganache.
