2 ripe avocados

1 cup ground beef or turkey (or black beans for a vegetarian option)

1 tablespoon taco seasoning

1/2 cup diced tomatoes

1/4 cup corn (canned or frozen)

1/4 cup red onion, finely chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper to taste

Optional toppings: sour cream, jalapeños, diced green onions, or hot sauce

Instructions
 

Prepare the Filling: In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it up with a spatula. Drain any excess fat and return to heat. Stir in the taco seasoning and a splash of water if needed. Cook for 2-3 minutes until the seasoning is well-integrated.

    Mix in Extras: Stir in the diced tomatoes, corn, and red onion. Cook for an additional 2-3 minutes until everything is warmed through. Season with salt, pepper, and lime juice. Remove from heat and let it cool slightly.

      Prepare the Avocados: While the filling cools, cut the avocados in half and remove the pits. Gently scoop out a bit more flesh from the center of each half to create a larger cavity for the filling. Reserve the avocado flesh and mash it in a bowl, mixing with a pinch of salt and pepper.

        Fill the Avocados: Spoon the taco mixture into the avocado halves, packing it slightly. Top each stuffed avocado with the reserved mashed avocado, followed by shredded cheese and fresh cilantro.

          Garnish & Serve: Add any optional toppings you desire, like a dollop of sour cream, sliced jalapeños, or a drizzle of hot sauce. Serve immediately for the best flavor and texture.
