1 package (12 ounces) wonton wrappers

1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream or Greek yogurt (for topping)

Fresh cilantro, chopped (for garnish)

Slices of jalapeño (optional, for extra heat)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Wrappers: Lightly grease a mini muffin tin. Press each wonton wrapper into the cups, shaping them to fit. You can use a small cup to help mold them if needed. Bake the wontons for about 8-10 minutes until they are golden and crispy. Remove from the oven and set aside.

      Cook the Chicken Fajita Filling:

        - In a large skillet, heat the olive oil over medium heat.

          - Add the diced chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through.

            - Add the sliced onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender and slightly caramelized.

              Assemble the Wonton Cups: Once the wonton cups have cooled slightly, fill each cup with the chicken and veggie mixture. Top each filled cup with a sprinkle of shredded cheese.

                Bake Again: Return the filled wonton cups to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.

                  Serve: Remove from the oven and let cool for a minute. Top each cup with a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, and jalapeño slices if desired. Serve warm and enjoy!
