Ingredients

1 pound cooked chicken, shredded or diced

1 bell pepper (red, green, or yellow), thinly sliced

1/2 onion, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1 package (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

Optional toppings: sour cream, guacamole, or salsa

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced bell pepper and onion, cooking until they are tender and slightly caramelized, about 5-7 minutes.

Season the Chicken: Add the shredded or diced chicken to the skillet, followed by the chili powder, cumin, garlic powder, paprika, salt, and black pepper. Stir well to coat the chicken and vegetables in the spices, cooking for an additional 2-3 minutes until heated through.

Prepare the Crescent Dough: On a clean surface, unroll the crescent roll dough and separate it into triangles along the perforated lines.

Fill the Rolls: Place a generous spoonful of the chicken and veggie mixture at the wide end of each triangle. Sprinkle a small amount of cheddar cheese on top of the filling.

Roll Them Up: Starting from the wide end, tightly roll each triangle towards the pointed end, encasing the filling securely. Pinch the ends to prevent any filling from leaking out during baking.

Bake: Arrange the rolled crescent stuffed dough on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until they are golden brown and flaky.

Serve: Once baked, remove from the oven and let cool slightly. Serve warm with optional toppings such as sour cream, guacamole, or salsa.
