Ingredients

4 slices of bread (white, whole wheat, or brioche)

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons sugar

1 cup apple pie filling (store-bought or homemade)

2 tablespoons butter (for greasing the muffin tin)

Powdered sugar (for dusting, optional)

Caramel sauce (for drizzling, optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a standard muffin tin with butter.

Prepare Bread: Using a rolling pin, flatten each slice of bread to about 1/4 inch thick. Cut each slice into quarters.

Form Cups: Gently press each quarter piece of bread into the greased muffin tin to form small cups, ensuring they cover the bottom and sides. You can overlap pieces as needed.

Make Egg Mixture: In a mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg (if using), and sugar until well combined.

Fill Cups: Spoon the apple pie filling into each bread cup, filling them to the top. Then, gently pour the egg mixture over the bread cups until it seeps into the filling, ensuring that each cup is soaked but not overflowing.

Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes, or until the egg is set, and the bread is slightly golden brown.

Cool & Serve: Allow the mini pies to cool for a couple of minutes before carefully removing them from the muffin tin. Dust with powdered sugar and drizzle with caramel sauce, if desired.

Enjoy: Serve warm as a delightful breakfast or dessert treat!
