Ingredients

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained

1 can (15 oz) black beans, drained and rinsed

1/2 cup sour cream

1/2 cup cream cheese, softened

1/4 cup fresh cilantro, chopped

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

Tortilla chips, for serving

Instructions

Prep the Cheese Mix: In a microwave-safe mixing bowl, combine the shredded cheddar cheese and Monterey Jack cheese. Set aside.

Blend the Creamy Base: In a separate bowl, mix together the sour cream and softened cream cheese until smooth and well combined. This will create a creamy base for your dip.

Combine Ingredients: To the cheese mix, add the can of diced tomatoes with green chilies (with liquid), drained black beans, chopped cilantro, ground cumin, garlic powder, and cayenne pepper. Mix everything thoroughly until well combined.

Melt the Mixture: Gradually add the creamy base to the cheese and vegetable mixture, stirring constantly. Microwave the entire mixture in 1-minute intervals, stirring in between, until the cheeses are melted and the dip is creamy, about 3-5 minutes.

Taste and Adjust: Once melted, taste the dip and adjust seasoning as desired. If you like more heat, add more cayenne pepper.

Serve Hot: Transfer the dip to a serving bowl and garnish with additional cilantro if desired. Serve immediately with tortilla chips for dipping.
