Ingredients

1 lb ground chicken

1 cup fresh breadcrumbs (preferably made from crusty bread)

1/2 cup grated Parmesan cheese

1/4 cup finely chopped parsley

2 cloves garlic, minced

1 small onion, finely chopped

1 large egg

1/4 cup milk

1 teaspoon Worcestershire sauce

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup marinara sauce (for topping)

Additional Parmesan cheese (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) and lightly grease a 9x5 inch loaf pan.

Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil and sauté the finely chopped onion and minced garlic until the onion is translucent and fragrant, about 5 minutes. Set aside to cool slightly.

Mix the Ingredients: In a large bowl, combine the ground chicken, fresh breadcrumbs, grated Parmesan cheese, chopped parsley, sautéed onion and garlic, egg, milk, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Shape the Meatloaf: Transfer the mixture to the prepared loaf pan. Shape it gently into a loaf, smoothing the top with a spatula.

Add the Sauce: Pour the marinara sauce evenly over the top of the meatloaf, spreading it gently to cover all sides.

Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for approximately 50 to 60 minutes or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.

Let It Rest: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps retain moisture.

Serve and Garnish: Slice the meatloaf into thick pieces, and serve hot. Optionally, sprinkle additional grated Parmesan cheese on top for added flavor and garnish with fresh parsley.
