Mediterranean Spinach Grilled Cheese

Ingredients
  

2 slices of whole-grain bread

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1/4 cup black olives, pitted and sliced

1 garlic clove, minced

1 tablespoon olive oil

1 tablespoon butter

Salt and pepper to taste

1/2 teaspoon oregano (optional)

Instructions
 

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Stir in the sun-dried tomatoes, black olives, oregano, salt, and pepper. Cook for another 2 minutes, then remove from heat.

      In a separate bowl, combine the spinach mixture with the crumbled feta cheese. Mix well and set aside.

        Butter one side of each slice of whole-grain bread.

          Heat a non-stick skillet over medium heat. Place one slice of bread, buttered side down, in the skillet.

            Spoon the spinach and feta mixture onto the unbuttered side of the bread in the skillet. Top with the second slice of bread, buttered side up.

              Cook for about 3-4 minutes, or until the bread is golden brown and crispy. Carefully flip the sandwich and cook the other side for another 3-4 minutes until it’s perfectly toasted and the cheese has melted.

                Remove from the skillet, slice in half, and serve warm. Enjoy your Mediterranean delight!
