For the Flatbread:

2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon sugar

1 teaspoon instant yeast

3/4 cup warm water (110°F)

2 tablespoons olive oil

For the Topping:

1 cup hummus (store-bought or homemade)

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Drizzle of extra virgin olive oil for serving

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix well.

      - Gradually add warm water and olive oil, stirring until a soft dough forms.

        - Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

          - Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

            Prepare the Toppings:

              - While the dough is rising, prepare your toppings. In a bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, lemon juice, salt, and pepper. Mix gently and set aside.

                Shape and Bake the Flatbread:

                  - Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.

                    - Once the dough has risen, punch it down and divide it into 2 equal portions.

                      - Roll each portion into a flat rectangle or circle, about 1/4 inch thick.

                        - If using a pizza stone, carefully transfer the flatbread onto a pizza peel or a baking sheet lined with parchment paper. If not, simply place the rolled-out dough on a greased baking sheet.

                          Bake the Flatbread:

                            - Bake the flatbread in the preheated oven for about 7-10 minutes or until golden brown and puffed up. Keep an eye on it to avoid over-browning.

                              - Remove from the oven and let it cool for a few minutes.

                                Assemble:

                                  - Spread a generous layer of hummus on top of each flatbread.

                                    - Evenly distribute the prepared topping mixture over the hummus-covered flatbreads.

                                      - Drizzle with extra virgin olive oil and garnish with more fresh parsley if desired.

                                        Serve:
