4 cod fillets (about 6 ounces each)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 ounces) diced tomatoes, preferably fire-roasted

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

1 cup fresh basil leaves, torn

Salt and pepper, to taste

Juice of 1 lemon

Cooked quinoa or couscous, for serving (optional)

Instructions
 

Prepare the Sauce: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

    Add Tomatoes and Spices: Pour in the canned diced tomatoes (with their juices) into the skillet. Stir in oregano, red pepper flakes, salt, and pepper. Bring to a simmer and let it cook for about 10 minutes, allowing flavors to meld.

      Incorporate Basil: Once the sauce has thickened slightly, fold in the torn basil leaves. Remove from heat and set aside.

        Cook the Cod: In a separate non-stick skillet or grill pan, heat a drizzle of olive oil over medium-high heat. Season the cod fillets with salt and pepper. Cook the cod for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

          Combine and Serve: On a serving platter, place the cooked cod fillets and generously spoon the tomato basil sauce over the top. Drizzle with fresh lemon juice before serving.
