Mediterranean Chicken Wraps

Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

4 large whole wheat or spinach wraps

1 cup hummus

1 cup cherry tomatoes, halved

1 cucumber, sliced

1 cup mixed greens (spinach, arugula, or lettuce)

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced

Juice of 1 lemon

Fresh parsley, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, dried oregano, paprika, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let them marinate for at least 30 minutes (keep it refrigerated).

    Cook the Chicken: In a large skillet over medium heat, add a little more olive oil if necessary. Remove the chicken from the marinade and place it in the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove from heat and let it rest for a few minutes before slicing it into strips.

      Prep the Wraps: While the chicken is resting, prepare your wrap ingredients. Spread about 1/4 cup of hummus onto each wrap, leaving a small border around the edges.

        Assemble the Wraps: On top of the hummus, layer the sliced chicken, halved cherry tomatoes, cucumber slices, mixed greens, crumbled feta cheese, and black olives. Squeeze fresh lemon juice over the top for a burst of flavor.

          Wrap It Up: Fold in the sides of the wrap and then roll it tightly from the bottom up to secure all the fillings inside.

            Slice and Serve: Slice each wrap in half at a diagonal. Garnish with fresh parsley and serve immediately, or wrap in foil for an on-the-go meal.
