4 boneless, skinless chicken breasts

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust for heat preference)

Juice of 1 lemon

Salt and pepper to taste

1/2 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Cook the Orzo: Begin by bringing a medium pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and half of the oregano and thyme. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Transfer to a plate and cover to keep warm.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.

        Combine Ingredients: Add the cherry tomatoes and spinach to the skillet, followed by the cooked orzo. Sprinkle in the remaining oregano and thyme, along with the lemon juice. Stir everything together gently to mix and heat through. Taste and adjust salt and pepper as needed.

          Serve: Spoon the orzo and veggie mixture onto plates, placing a chicken breast on top of each serving. Sprinkle crumbled feta cheese over the dish and garnish with fresh parsley.
