Mediterranean Baked Snapper

2 whole snapper (cleaned and scaled, approximately 1.5 lbs each)

4 tablespoons olive oil

2 lemons (1 sliced and 1 juiced)

4 cloves garlic (minced)

1 cup cherry tomatoes (halved)

1 medium red onion (sliced)

1 cup black olives (pitted and halved, preferably Kalamata)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Snapper: Rinse the snapper under cold water and pat dry with paper towels. Make 3-4 diagonal cuts on each side of the fish to help them cook evenly.

      Season the Fish: In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper. Rub this mixture generously on the outside and inside of each snapper, ensuring the flavors penetrate through the cuts.

        Prepare the Baking Dish: In a large baking dish, spread the sliced red onion and halved cherry tomatoes across the bottom. Place the seasoned snapper on top of the vegetables.

          Add Lemon and Olives: Lay the lemon slices on top of the fish and scatter the black olives around the snapper and vegetables.

            Cover and Bake: Drizzle any remaining olive oil over the fish and cover the baking dish with aluminum foil. Bake in the preheated oven for 25-30 minutes, until the fish flakes easily with a fork.

              Finish and Serve: Remove the foil and bake for an additional 5-10 minutes to slightly brown the top. Garnish with fresh parsley before serving.
