Ingredients

1 lb ground beef

1 lb breakfast sausage (or spicy sausage for a kick)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (12 oz) diced tomatoes with green chilies (like Rotel)

1 pack (8 oz) cream cheese, softened

1 cup sour cream

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 packet (1 oz) ranch seasoning mix

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Optional toppings: sliced jalapeños, chopped green onions, or fresh cilantro

Instructions

Cook the Meats: In a large skillet over medium-high heat, brown the ground beef and sausage together, breaking it up with a spatula until fully cooked. Drain excess fat and set aside.

Mix the Ingredients: In a large mixing bowl, combine the cooked meats, black beans, pinto beans, diced tomatoes with green chilies, cream cheese, sour cream, ranch seasoning mix, garlic powder, onion powder, and half of the cheddar and Monterey Jack cheese. Stir until all ingredients are well mixed and creamy.

Season: Taste the dip and season with salt and pepper as needed. Adjust the spice level with more ranch seasoning or jalapeños if desired.

Transfer to Baking Dish: Spread the mixture evenly into a large, oven-safe baking dish. Top with the remaining cheddar and Monterey Jack cheese.

Bake: Preheat your oven to 350°F (175°C). Place the baking dish in the oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly, and the dip is heated through.

Serve: Remove from the oven and let sit for 5 minutes. Serve warm with tortilla chips, pita chips, or veggies for dipping. Garnish with optional toppings like sliced jalapeños, chopped green onions, or fresh cilantro before serving.
