1 pound ground beef (or a mix of beef and pork)

1/2 cup plain breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

4 cups beef broth

1 (28 oz) can crushed tomatoes

1 teaspoon red pepper flakes (optional)

4 slices of your favorite bread (submarine or baguette works well)

1-2 cups shredded mozzarella cheese

Fresh basil, for garnish

Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan, parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined. Using your hands or a scoop, form small meatballs, about 1 inch in diameter.

    Brown the Meatballs: In a large pot, heat the olive oil over medium heat. Add the meatballs in batches and brown on all sides, about 5-7 minutes. Remove the meatballs from the pot and set aside.

      Sauté Aromatics: In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

        Simmer the Soup: Pour in the beef broth and crushed tomatoes, then stir in the red pepper flakes (if using). Bring the mixture to a boil, then reduce the heat to low.
