4 salmon fillets (6 oz each)

2 tbsp olive oil

4 cloves garlic, minced

1/2 cup white wine (like Sauvignon Blanc)

1/2 cup heavy cream

1 tsp Dijon mustard

1 tbsp honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Lemon slices for garnish

Instructions
 

Prepare the Salmon: Preheat oven to 400°F (200°C). Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Set aside.

    Sauté the Garlic: In an oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.

      Make the Sauce: Pour in the white wine, and let it simmer for 2-3 minutes until it reduces slightly. Then, stir in the heavy cream, Dijon mustard, honey, lemon juice, and lemon zest. Add the fresh thyme and season with salt and pepper. Allow the sauce to simmer on low heat for another 3-4 minutes until it thickens slightly.

        Add the Salmon: Carefully place the seasoned salmon fillets into the skillet with the sauce. Spoon some of the sauce over the top of each fillet.

          Bake the Salmon: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

            Garnish and Serve: Remove the skillet from the oven and sprinkle the chopped parsley on top. Serve the salmon immediately with extra sauce drizzled over the top and garnish with lemon slices.
