2 cups cucumbers, thinly sliced

1 large onion, thinly sliced (red or yellow)

2 cups cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1/4 cup apple cider vinegar

3 tablespoons olive oil

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon dried oregano

Optional: a pinch of red pepper flakes for heat

Prepare the Vegetables: Wash and thinly slice the cucumbers and onion. Halve the cherry tomatoes. Place all the vegetables in a large mixing bowl.

    Make the Marinade: In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, garlic powder, onion powder, salt, black pepper, oregano, and red pepper flakes (if using). Ensure everything is well combined.
