Ingredients

1 cup rolled oats

2 cups almond milk (or any milk of your choice)

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/2 cup pecans, chopped

1/2 cup Greek yogurt (optional for creaminess)

Pinch of salt

Fresh fruit for topping (like banana, berries, or apple slices)

Instructions

In a medium-sized mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, chopped pecans, and a pinch of salt. If you're adding Greek yogurt for extra creaminess, mix it in at this stage.

Stir the mixture well until all ingredients are evenly combined.

Divide the mixture into two mason jars or airtight containers. Ensure there's enough space at the top for any toppings you might add later.

Seal the jars or containers and place them in the refrigerator overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.

In the morning, give the oats a quick stir. If they seem too thick, you can add a splash of milk to loosen them up to your desired consistency.

Top your overnight oats with fresh fruit, more chopped pecans, and a drizzle of maple syrup if desired.

Enjoy your delicious and nutritious Maple Pecan Overnight Oats cold straight from the fridge or warm them in the microwave for a cozy breakfast!
