1 cup rolled oats

2 cups unsweetened almond milk (or any milk of your choice)

2 tablespoons maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

Pinch of salt

1/2 cup chopped pecans (toasting optional)

1/2 cup Greek yogurt (optional for creaminess)

Fresh fruit (such as sliced bananas or berries) for topping

Instructions
 

In a medium-sized bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, and pinch of salt. Stir well to ensure the oats are fully submerged in the liquid.

    If you like your oats creamy, fold in the Greek yogurt until well mixed. This step is optional but adds a nice texture.

      Add in half of the chopped pecans to the mixture, reserving the other half for topping later.

        Transfer the mixture to an airtight container or divide it into individual jars for easy serving. Seal tightly.

          Place the containers in the refrigerator and let the oats soak overnight (or at least 4-6 hours) to achieve the desired consistency.

            In the morning, give the oats a good stir. If they are too thick, add a splash more of almond milk until the desired texture is reached.
